I was looking around my pantry the other day, trying to think of what to make for snacks for the next few days, and spied a bag of maple-flavoured marshmallows. Plus, I’d just read about using brown butter to add flavour to crispy rice treats, so I thought why not combine the two? And voila, Maple & Brown Butter Crispy Rice Treats were born! As easy as the original childhood version, but just a little fancied up so that adults can enjoy them too!
Making brown butter takes maybe two minutes, and adds heaps of flavour to anything from gnocchi to baked goods. Basically, you’re heating the butter until the milk solids turn brown and sink to the bottom of the pan. The resultant butter tastes vaguely nutty and caramelly and really elevates almost any dish. Even basic crispy rice treats!
Want to whip up this adultified treat yourself? Let’s!
- 1 bag maple-flavoured marshmallows
- 3-4 tbsp. butter
- 6 c. crispy rice cereal
- In the bottom of a pot, melt the butter over medium-high heat and keep cooking it until brown solids form in it.
- Reduce heat to medium, add in marshmallows, and stir until marshmallows are entirely melted and butter is incorporated.
- Remove from heat and stir in crispy rice cereal.
- Press into a buttered lasagna pan.
- When cool, cut into squares and enjoy!
Use buttered hands to press the sticky mixture into the buttered tray -- this makes the process so much easier!

This is a great recipe if you want to appeal to both kids and adults palates. Holiday cookie tray? Playdate? Weekday dessert? It’s just fancy enough that you can serve it to guests and they’ll like the flavour, and give it to kids and they’ll gobble it down too.
This recipe for Maple & Brown Butter Crispy Rice Treats is very adaptable, as you can mix in anything you want to add to the flavour! Perhaps chopped, roasted almonds, to bring out the nutty notes of the brown butter? Or chopped, dried cranberries to bring in some more fall flavour? Let me know in the comments your favourite mix-in for crispy rice treats!
